Gingerbread Men
Ingredients
100ml/3 ½ fluid oz treacle
55g/2 oz margarine
55g/2oz dark brown sugar
1 teaspoon bicarbonate of soda
½ teaspoon ground allspice
½ teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon ground ginger
1 large egg
8 ½ oz/212g Odlum’s tritamyl
3 ½ oz /80gGem Pack Corn flour
To Decorate
White chocolate
Method
Preheat oven to 180 degree Celsius/ gas mark 4.
- Combine treacle and margarine and then melt together in the microwave on low heat. Set aside to cool.
- Beat the egg and set aside
- Mix the flours in a separate bowl and make sure there are no lumps
- Add the bicarbonate of soda and spices to the flours and mix well. Again, ensure there are no lumps
- Add the beaten egg to the treacle and margarine. Then add the flour mixture.
- Beat with a wooden spoon for two minutes
- Transfer the dough to a board floured lightly with potato flour. Knead a little and roll out. With a ginger bread man cutter, cut out the shapes and place on a non stick tray (or a tray lined with parchment paper).
- If you have difficulty rolling the dough, place the dough on a piece of cling film. Cover it with another piece of cling film and roll the dough between the two pieces. This will stop the dough from sticking to the board or rolling pin
- Bake for 12 minutes or unit the edges are firm
- Cool on the tray before lifting off. Transfer to wire rack to cool
- Decorate with melted white chocolate to make buttons and a face
- Will hold for a couple of days in an air tight container.

Can you tell me what kind of flour Odlum’s tritamyl is? Is it anything like Teff flour? I need to know it’s composition as I am sensitive to amino acids which teff is high in.
Could you also give the ingredients of your prepared products so that I can check them for suitability with me?
