G.F. Almond & Orange Cake
2 small oranges
6 eggs
½ teaspoon bread soda
1 heaped teaspoon gluten free baking powder
250g/10oz ground almonds
250g castor sugar
Method:
- Put the whole orange in a pot with cold water, bring to the boil and simmer for one hour. Drain and cool. Put in a food processor and pulp.
- Add the eggs, baking powder, baking solda, ground almonds and caster sugar into the food processor and blend until missed.
- Pour into a spring form tin.
- Bake at 180 degrees Celsius for an hour.
- Check after 45 minutes as it may need to be covered with tin foil to stop the top from burning.
- Insert a skewer to see if cooked.
- Leave to cool in the tin. Once cold, remove from the tin.
- Decorate with slices of fruit.
