Ingredients:

2 small oranges

6 eggs

½ teaspoon bread soda

1 heaped teaspoon gluten free baking powder

250g/10oz ground almonds

250g castor sugar


Method:

  1. Put the whole orange in a pot with cold water, bring to the boil and simmer for one hour. Drain and cool. Put in a food processor and pulp.
  2. Add the eggs, baking powder, baking solda, ground almonds and caster sugar into the food processor and blend until missed.
  3. Pour into a spring form tin.
  4. Bake at 180 degrees Celsius for an hour.
  5. Check after 45 minutes as it may need to be covered with tin foil to stop the top from burning.
  6. Insert a skewer to see if cooked.
  7. Leave to cool in the tin. Once cold, remove from the tin.
  8. Decorate with slices of fruit.
